A tasty and versatile side that's on the table in just 15 minutes. It is particularly good with grilled or pan-fried fish and chicken.

  1. SCRUB Scrub the potatoes clean and rinse under the tap.
  2. Put them into a saucepan and cover with water. Bring to the boil then turn the heat down and simmer for 10 minutes or until tender when pricked with a fork.
  3. Drain and transfer to a warm bowl. Gently crush the potatoes with a fork.
  4. Wash the chives and snip over the potatoes. Add the olive oil and ½ teaspoon salt. Mix well to coat.
