  1. PRE-HEAT OVEN TO 180˚C/160˚C FAN/GAS 4
  2. Put the cranberries into a bowl and squeeze the orange over them. Leave to soak for 15 -20 minutes
  3. Butter a 20cm x 12cm loaf tin and line with baking parchment.
  4. Peel, core and coarsely grate the apples.
  5. Put the flour, dried ginger , oatmeal and baking powder into a mixing bowl. Break the egg into the dried ingredients and add the olive oil and grated apple. Strain the cranberries and add. Mix everything together with an electric hand mixer.
  6. Pour the batter into the prepared loaf tin and bake for 45 minutes or until golden on top.
  7. Remove the tin from the oven and leave to cool for 10 minutes, then transfer the loaf to a wire rack and leave to cool completely.
