This quick, cheap and nutritious meal it's on the table in just over 30 minutes and it's a tasty way to add extra veggies to the dinner plate.

INSTRUCTIONS

  1. PRE-HEAT THE OVEN TO 200˚C/180˚C FAN/GAS 6
  2. Wash the peppers, put them on a roasting tray and roast for 25 minutes turning a couple of times so they cook evenly. When they are cool enough to handle, peel the skin off and remove the seeds and pith.
  3. Wash and chop the parsley. Put the peppers and parsley in the blender with 1 tablespoon of olive oil and a little salt. Blitz to a creamy consistency.
  4. Warm the remaining tablespoon of oil in a frying pan, add the turkey and pan-fry for 4-5 minutes. Turn the meat over, drizzle with the lemon juice and cook for another 4-5 minutes.
  5. Add a good grinding of black pepper to the turkey and serve with the pepper sauce.
