Herb omelette with fennel and orange salad

This omelette and fennel salad is really quick and easy to rustle up and makes a great lunch or light supper.
If you don’t have any fresh herbs at hand, use a small pinch of dried oregano and dried mint will work well too.
Eggs are a great source of protein and rich in a range of other nutrients, including vitamin D & K, both essential for bone health. Fennel is an excellent source of potassium, vitamin C and fibre and aids digestion.
