Minestrone

Minestrone is a fabulous, well – balanced meal rich in fibre, vitamins and antioxidant micronutrients. The beans add valuable fibre and iron. Make a big batch and serve it in different ways throughout the week. Have a big bowlful on its own for lunch. Add short shaped pasta (approx. 60g dried pasta per person) for a substantial dinner. Or toast a slice of good quality sourdough then pour over the hot soup. Minestrone is one of those dishes that taste even better when re-heated. Make sure though, that you re-heat just the right amount you need for a specific meal.
