Quick and healthy prawn curry

This is a super fast and easy curry bursting with nutrients and on the table in just 20 minutes. Prawns are an excellent source of lean protein and selenium. The spice combo of cumin and ginger aids digestion and the tomatoes add valuable antioxidants including lycopene, which can protect against degenerative diseases including cancer.
Frozen prawn work well in this recipe too and you can add them to them straight from the freezer. Serve with some plain brown basmati rice for a healthy and satisfying meal.
