A white salad of chicory, celeriac and pears

A high fibre winter salad also rich in vitamins and minerals from the chicory and celeriac.  Serve it has an unusual, deliciously healthy starter.

  1. Wash and core the pears and slice thinly. Drizzle with lemon juice and set aside. Peel and thinly slice the celeriac and drizzle with lemon juice. Coarsely chop the walnuts. Wash the chicory leaves.
  2. Make the dressing by combining the olive oil, balsamic vinegar, a little salt and a grinding of black pepper. Add the pieces of walnut to the vinaigrette.
  3. Arrange the chicory leaves, slices of pears and celeriac in a serving dish. Drizzle with the vinaigrette and serve.
