Asparagus wraps with balsamic dressing

  • You can prepare the asparagus wraps and dressing in advance and refrigerate, covered with cling film, until ready to roast.
  • These moreish wraps also make delicious spring canapés, served with a separate side of balsamic dressing.
  • If you can’t find speck, Parma ham is a good substitute.

  1. PRE-HEAT OVEN TO 190˚C/170˚C FAN/GAS 5
  2. Snip the woody ends off the asparagus and rinse under running water.
  3. Wrap a slice of speck round each asparagus spear and line up the asparagus in a roasting tin.
  4. Roast for 8-10 minutes, turning over the wrapped spears once during cooking.
  5. Meanwhile, prepare the dressing by beating together the olive oil, balsamic vinegar and a small pinch of sea salt.
  6. Drizzle the dressing over the asparagus and serve.
