INSTRUCTIONS

  1. PRE-HEAT THE OVEN TO 200˚C/180˚C FAN/GAS 6
  2. Use a 5-6cm pastry cutter to cut 2 circles out of each tortilla. Brush each round with olive oil on both sides and put on baking tray. Bake for about 5 minutes until crisp. Turn the oven off and keep warm.
  3. Peel and chop the onion. Crush the garlic. Wash the chilli and cut into rounds. Wash and finely chop the coriander.
  4. Halve and stone the avocados. Scoop the flesh out with a spoon into a large bowl.
  5. Add the onion, garlic, chilli and coriander to the avocado. Add the juice of two limes, the olive oil, a little salt and a grinding of black pepper. Whizz the mixture to a puree with a stick blender.
  6. To assemble the tostadas, spoon the avocado puree on each tortilla round and top with our Mexican tomato salsa .
