A beautifully balanced meal, rich in protein and iron from the beef and vitamins, minerals and fibre from the greens. Healthy, fast food!

You can also use kale or chard if you can't find spring greens.

  1. Rinse the meat under the tap and pat dry with kitchen paper. Slice the steak thinly into ½ cm pieces.
  2. Wash the greens thoroughly and slice them. Wipe clean and slice the mushrooms. Peel and finely chop the ginger.Beef, mushrooms & greens stir fry
  3. Heat a wok or frying pan. When hot, add 2 tablespoons of oil and stir-fry the meat until browned all over. You may need to do this in two batches, adding a little more oil. Remove the meat and wipe the pan or wok clean.
  4. Cook noodles according to packet instructions.
  5. Add 1 tablespoon of oil to the wok or pan and stir-fry the ginger for 1 minute.
  6. Add the spring greens and mushrooms. Cook for 3 minutes, stirring often.
  7. Add the steak pieces and tamari and fish sauces. Continue cooking for another 3 to 4 minutes until the sauce has thickened a little and everything is warmed through.
  8. Drain the noodles in the sieve and toss them into the meat and vegetables. Serve immediately.Beef, mushrooms & greens stir fry
