Blueberries are a fantastic source of vitamin C which helps protect cells against damage and aids the absorption of iron, manganese which helps regulate blood sugar levels and a host of health promoting phytochemicals.
Blueberries are a fantastic choice as one of your seven portions of fruit and vegetables a day. Try adding them to your breakfast cereal, including them in a packed lunch or mixing with natural yoghurt for a delicious dessert.

  1. Place the blueberries in a colander and rinse under running water. Reserve a few for decoration.Blueberry fool
  2. Put the berries in a pan and add the sugar and lemon juice. Heat gently for about 8-10 minutes until the fruit is soft.
  3. Crush the berries with a fork to make a compote. Leave to cool.
  4. Meanwhile, whip the cream to soft peaks. Fold it into the yogurt. Stir in two thirds of the blueberry compote then lightly fold in the remaining compote.
  5. Divide the mixture into 4 individual glasses and top with the reserved blueberries. Chill until ready to serve.
