This is a great seasonal side dish, low in calories but high in fibre, vitamin C an inulin which helps boost friendly gut bacteria.

Serve it with grilled fish or chicken.  It is also great with  some strong cheese or  ham.

  1. TURN THE OVEN ON TO 200˚C/180˚C fan/Gas 6
  2. Boil a kettle and make up the stock according to the packet instructions.
  3. Butter an ovenproof dish. Wash the thyme.
  4. Halve the 4 chicory heads lengthways. Rinse under the tap. Put them in the dish.
  5. Add the stock, the thyme, a pinch of salt and a good grind of black pepper.
  6. Cover tightly with foil and put in the oven for 20 minutes.
  7. Remove the foil and continue to cook for a further 15 minutes.
