Bored with the same vegetables? Try this tonight. Fennel is an excellent source of potassium, vitamin C and fibre and aids digestion.

INSTRUCTIONS

  1. Trim the tops of the fennel bulbs and remove the outer leaves. Cut each bulb into wedges and rinse under running water.
  2. Peel and bash the garlic. Wash and roughly chop the parsley.
  3. Warm the oil in a frying pan and brown the garlic clove . Add the fennel and cook over a medium heat for a few minutes, stirring frequently.
  4. BRAISE Turn the heat down to low, add some hot water and a little salt and cover the pan with a lid. Cook for about 10-12 minutes until the fennel is tender when pierced with a fork. Remove the garlic.
  5. Sprinkle with the parsley and a grinding of black pepper and serve.
