Bored with the same vegetables? Try this tonight. Fennel is an excellent source of potassium, vitamin C and fibre and aids digestion.

INSTRUCTIONS
- Trim the tops of the fennel bulbs and remove the outer leaves. Cut each bulb into wedges and rinse under running water.
- Peel and bash the garlic. Wash and roughly chop the parsley.
- Warm the oil in a frying pan and brown the garlic clove . Add the fennel and cook over a medium heat for a few minutes, stirring frequently.
- BRAISE Turn the heat down to low, add some hot water and a little salt and cover the pan with a lid. Cook for about 10-12 minutes until the fennel is tender when pierced with a fork. Remove the garlic.
- Sprinkle with the parsley and a grinding of black pepper and serve.
