These delicious bars are packed with protein, fibre, vitamins, antioxidants and healthy fats and are great as a pre or post-workout snack.  Gluten and dairy free too.

  1. PRE-HEAT OVEN TO 170˚C/150˚C FAN/GAS 3
  2. Put the oats, seeds and nuts on a baking tray and bake for 10 minutes until lightly toasted.
  3. Meanwhile, finely chop the apricots.
  4. Put the peanut butter, sugar, honey, vanilla extract and a pinch of salt in a pan and heat over a medium heat for a couple of minutes, stirring frequently to combine.
  5. Tip the dry ingredients into the pan and mix well. Line a 20cm x 20cm baking tin with cling film. Spread the mixture in the tin and press down firmly until it is evenly flattened. Cover with extra cling film and chill for at least 1 hour to harden.
  6. Remove the top layer of cling film and lift the power bar block out of the tin. Cut into 8 bars and store in an airtight container in the fridge.
