INSTRUCTIONS

  1. Rinse the chicken breasts and pat dry with kitchen paper. Cut the meat into cubes.
  2. Squeeze the lemon. Make a marinade by mixing together the oil, lemon juice, oregano, a pinch of salt and a good grind of black pepper in a bowl. Put the chicken into the marinade and leave in the fridge for at least 1 hour.
  3. TURN THE GRILL ON TO HIGH
  4. Wash the peppers, halve them and deseed. Cut each half into 4 pieces.
  5. Cut the slice of ham into 16 small squares.
  6. Load the skewers by alternating one piece of chicken with a piece of pepper and ham.
  7. Put the skewers under the grill, brushing them frequently with the rosemary sprigs dipped in the marinade. Or you could just spoon marinade over them at intervals.
  8. Turn the skewers over regularly until they are evenly cooked. This will take about 10 minutes.
