  • These easy bakes are ideal for getting the children involved in Christmas preparations. They make lovely gifts too, especially for grandparents and teachers.

  1. PRE-HEAT OVEN TO 180˚C/160˚C FAN/GAS 4
  2. Weigh the butter and leave it to soften.
  3. Sieve the flour with the baking powder and bicarbonate of soda. Add the crushed cloves, a grating of nutmeg and a pinch of salt and mix well.
  4. Cream together the butter and demerara sugar.
  5. Add one whole egg and one yolk, reserve the egg white. Beat the mixture until creamy and fluffy.
  6. Add the honey and the spiced flour and mix well.
  7. Tip the mixture on to a floured surface and knead into a ball. Wrap it in cling film and refrigerate for at least 4 hours.
  8. Divide the biscuit mixture into two balls. Put each ball between two sheets of baking parchment and flatten with a rolling pin to a sheet about 2mm thick. Return to the fridge and chill for about 15 minutes.
  9. Cover 2 baking sheets with baking parchment. Cut the biscuit dough into the desired shapes and bake for 8 minutes. Remove from the oven and leave to cool.
  10. Meanwhile, prepare the icing by beating the egg white with the icing sugar and a tablespoon of lemon juice until you have a glossy mixture.
  11. Transfer the icing to a piping bag with a 3mm nozzle and decorate the biscuits.
  12. You can turn the biscuits into edible Christmas tree decorations or place holders by using a straw to make a hole in each before baking. Then simply thread a festive ribbon through the hole once the biscuits are cooked and decorated.
