Beat the eggs into a mixing bowl. Add the coconut and sugar and mix thoroughly. Your hands are probably best for this job.
Divide the mixture into ten balls and place, well-spaced apart, on the prepared baking sheet. Flatten each ball into a plump round and bake for 15-20 minutes or until set and golden brown on top.
Leave to cool for 5 minutes on the baking sheet and then transfer to a wire rack to cool completely. Store in an airtight container.
