INSTRUCTIONS
- SCRUB Scrub the potatoes clean and rinse under the tap.
- Put them into a saucepan and cover with water. Bring to the boil then turn the heat down and simmer for 10 minutes or until tender when pricked with a fork.
- Drain and transfer to a warm bowl. Gently crush the potatoes with a fork.
- Wash the chives and snip over the potatoes. Add the olive oil and ½ teaspoon salt. Mix well to coat.
