  • Adding fresh mango to the traditional combo of strawberries, orange juice and orange liqueur brings an exotic touch to this really, easy pudding.
  • Leave out the liqueur for a still delicious but child-friendly pud.

  1. Wash, hull and halve the strawberries. Peel, stone and dice the mangoes. Wash the mint sprigs and set aside.
  2. Arrange the fruit in a salad bowl and drizzle with freshly squashed orange juice.
  3. Add the Cointreau, mix well to combine and chill for at least 20 minutes.
  4. Allow the fruit to come back to room temperature before serving in individual glass bowls with a sprig of mint.
