- Newly-baked flapjacks keep their shape better if you put them into the fridge for at least 20 minutes once they have cooled before lifting them out of the tray.
- These easy to make treats will keep in an airtight container in the fridge for up to 5 days.

INSTRUCTIONS
- PRE-HEAT OVEN TO 180˚C/160˚C fan/Gas 4
- Grease a 22cm square baking tray with a little butter.
- Finely chop the slices of mango and mix with the goji berries.
- Put the butter, agave nectar and honey in a large pan and melt over a low heat, stirring continuously.
- Remove the pan from the heat and add the oats, coconut, mango and goji berries. Stir until all the ingredients are thoroughly mixed.
- Spread the mixture into the baking tray with the help of a spatula, pressing down lightly to achieve even thickness.
- Bake for 20 minutes or until golden brown. Remove from the oven and score into equal pieces. Leave to cool completely.
