dried goji berries
PRE-HEAT OVEN TO 180˚C/160˚C fan/Gas 4
Grease a 22cm square baking tray with a little butter.
Finely chop the slices of mango and mix with the goji berries.
Put the butter, agave nectar and honey in a large pan and melt over a low heat, stirring continuously.
Remove the pan from the heat and add the oats, coconut, mango and goji berries. Stir until all the ingredients are thoroughly mixed.
Spread the mixture into the baking tray with the help of a spatula, pressing down lightly to achieve even thickness.
Bake for 20 minutes or until golden brown. Remove from the oven and score into equal pieces. Leave to cool completely.
Newly-baked flapjacks keep their shape better if you put them into the fridge for at least 20 minutes once they have cooled before lifting them out of the tray.
These easy to make treats will keep in an airtight container in the fridge for up to 5 days.
