Give fried potatoes a healthier twist with this simple, speedy side

Peel the potatoes and slice into 5mm slices. Peel and bash the garlic clove.
Warm the oil in a frying pan with a tight-fitting lid. Brown the garlic clove.
Add the potato slices and coat in the oil. Sprinkle with a little salt and a generous grinding of black pepper.
Turn the heat down and cook the potatoes over a very low heat for about 30 minutes, stirring occasionally to ensure that the slices are golden and crunchy.
Remove the garlic clove and serve.
