Green beans with shallots

  1. Top and tail the green beans and wash in a colander under running water. Peel and finely chop the shallots.
  2. Bring a pan of salted water to the boil and cook the beans for 3-4 minutes.
  3. Meanwhile, warm the olive oil in a frying pan, add the shallots and sprinkle with a little salt. Cook over a very low heat for 6-8 minutes until soft but not browned.
  4. Drain the beans and toss them into the frying pan. Stir thoroughly and cook for a further couple of minutes. Serve immediately.
