This is one of my favourite ways of cooking asparagus. It makes a great starter or the perfect accompaniment to roast chicken. Asparagus does not just tastes delicious but it is also very good for you, rich in vitamins, minerals and fibre.

INSTRUCTIONS
- Snip the woody ends off the asparagus and rinse under running water.
- Heat a large griddle pan and dry-griddle the asparagus on both sides until nicely seared. It will take up to 10 minutes depending on the thickness of the asparagus.
- Meanwhile, prepare the dressing by squeezing the lemon and mixing the juice with the olive oil, a pinch of sea salt and a generous grinding of black pepper.
- Transfer to asparagus to a serving dish, drizzle with lemon dressing and top with shaving of parmesan.
