This is one of my favourite ways of cooking asparagus. It makes a great starter or the perfect accompaniment to roast chicken. Asparagus does not just tastes delicious but it is also very good for you, rich in vitamins, minerals and fibre.

INSTRUCTIONS

  1. Snip the woody ends off the asparagus and rinse under running water.
  2. Heat a large griddle pan and dry-griddle the asparagus on both sides until nicely seared. It will take up to 10 minutes depending on the thickness of the asparagus.
  3. Meanwhile, prepare the dressing by squeezing the lemon and mixing the juice with the olive oil, a pinch of sea salt and a generous grinding of black pepper.
  4. Transfer to asparagus to a serving dish, drizzle with lemon dressing and top with shaving of parmesan.
