Griddled pork chops in lemon thyme marinade

  • Marinating is such a simple way to get extra fantastic flavour into meat. Most marinades are fast to put together and then you can get on with something else while it works its magic.

  1. Rinse the thyme and remove the leaves from the sprigs. Reserve half the leaves and chop the rest.
  2. Peel and crush the garlic. Squeeze the lemons.
  3. In a shallow dish, mix together the olive oil and lemon juice. Add the chopped thyme and crushed garlic.
  4. Rinse the meat and pat dry with kitchen paper. Make small cuts on the fatty edges to prevent curling during cooking and slightly flatten with a rolling pin.
  5. Add the meat to the marinade, sprinkle with salt and cover with cling film. Refrigerate for 45 minutes.
  6. Heat a griddle pan. Lift the meat out of the marinade and cook for 5 minutes on each side. Add a generous grind of black pepper and sprinkle with the remaining thyme leaves.
  7. Serve immediately.
