Linguine with cherry tomatoes & fresh herbs

  1. Bring a large saucepan of salted water to the boil
  2. Peel and bash the garlic. Wash, deseed and chop the chilli.
  3. Warm the oil, garlic and chilli in the frying pan. When the oil starts to bubble, turn off the heat and leave it to infuse.
  4. Rinse and finely chop the basil, chives, parsley and sage.
  5. Wash the tomatoes, chop them in half and then finely dice them. Put the herbs and tomatoes into a large bowl.
  6. Meanwhile, cook the linguine as directed on the packet.
  7. Drain the linguine in the sieve or colander. Add to the bowl of herbs and tomatoes
  8. Remove the garlic and chilli from the oil. Pour the hot, flavoured oil on to the pasta.
  9. Mix well and serve.
