Soft, sweet peaches work very well with the umami taste of Parma Ham. Choose ripe, yet firm peaches and the best quality Parm ham you can get for this quick, yet impressive starter.

INSTRUCTIONS
- TURN THE GRILL ON TO HIGH
- Wash and halve the peaches and remove the stones. Heat a griddle pan until hot. Place the peaches in the hot pan, cut flesh side down, for a couple of minutes. Remove from the pan.
- Prepare the dressing by combining the oil and balsamic vinegar with a little sea salt. Place the peaches in a baking tray and drizzle with a couple of teaspoons of the dressing
- Put the peaches under the grill for about 5 minutes.
- Meanwhile, cut the parmesan into thin shavings. Arrange the salad and Parma ham on individual plates, add half a peach, scatter the parmesan shavings over and drizzle with the remaining balsamic dressing.
- Serve at room temperature.
