Penne with romano pepper and tomato sauce

  1. Bring a large saucepan of salted water to the boil
  2. Wash the peppers, halve them, deseed and cut into small pieces. Peel and crush the garlic. Drain the haricot beans, put in a colander and rinse under running water.
  3. Put the oil, garlic and chilli flakes into a frying pan and cook over a low heat for 2 minutes. Stir frequently to avoid burning the garlic.
  4. Add the chopped peppers and cook gently for 5 minutes or until the peppers have softened. Add the haricot beans and stir to combine, cook for a couple of minutes.
  5. Add the chopped tomatoes and stir well. Season with a pinch of salt and a grind of black pepper and cook gently for 10-15 minutes.Penne in tomato and romano pepper sauce recipe
  6. Meanwhile, cook the penne as directed on the packet.
  7. Drain the penne and tip in the pan with the tomato and pepper sauce, mix well and serve.
