This chicken dish is rich in lean protein from the chicken and antioxidants, vitamins and mineral from our  peri peri sauce which is very easy to make and much healthier than shop-bought versions which are usually laden with sugar, salt and additives.
If you don’t want to barbecue, you can cook the chicken skewers under a hot grill for 8-10 minutes, turning regularly.

INSTRUCTIONS

  1. Prepare the sauce. Find the recipe for peri peri sauce here.
  2. Cut each chicken breast lengthways into 3 strips. Put the chicken pieces in a china or glass bowl and cover with half the sauce. Cover with cling film and refrigerate for 20 minutes.
  3. Wash, halve and deseed the peppers, then cut each half into bite-sized chunks. Peel and quarter the onion, then halve each quarter.
  4. Wash and finely chop the coriander. Mix the yogurt with the coriander, squeeze in the lime juice, cover with cling film and refrigerate.
  5. Thread two or three pieces of chicken on to a skewer, alternating with a piece of pepper and onion.
  6. Barbecue over medium hot coals for 8-10 minutes, basting regularly with the remaining sauce. Turn the skewers every couple of minutes to ensure that they are evenly cooked.
  7. Warm the wraps for 1-2 minutes. Fill the wraps with the chicken bites, salad leaves and tomatoes and drizzle with the yogurt dressing.
