INSTRUCTIONS
- Bring a large pan of salted water to the boil.
- Halve and finely shred the cabbage then rinse under running water. Peel, core and dice the apples. Peel and finely slice the onion.
- Put the cabbage in a steaming basket, place over the boiling water, cover and steam for 5 minutes.
- Meanwhile, warm the oil in another pan. Add the onion, sprinkle with a little salt and cook for 7-8 minutes until softened.
- Add the apples and the steamed cabbage, stir and cook for a couple of minutes. Drizzle with the balsamic vinegar and cook for 1 minute more.
- Cover the pan with a lid, turn the heat down and simmer for 10- 15 minutes or until the cabbage is tender.
- Add a generous grinding of black pepper and serve.
