INSTRUCTIONS

  1. Bring a large pan of salted water to the boil.
  2. Halve and finely shred the cabbage then rinse under running water. Peel, core and dice the apples. Peel and finely slice the onion.
  3. Put the cabbage in a steaming basket, place over the boiling water, cover and steam for 5 minutes.
  4. Meanwhile, warm the oil in another pan. Add the onion, sprinkle with a little salt and cook for 7-8 minutes until softened.
  5. Add the apples and the steamed cabbage, stir and cook for a couple of minutes. Drizzle with the balsamic vinegar and cook for 1 minute more.
  6. Cover the pan with a lid, turn the heat down and simmer for 10- 15 minutes or until the cabbage is tender.
  7. Add a generous grinding of black pepper and serve.
