INSTRUCTIONS
- Drain the black beans and rinse thoroughly under running water. Blitz the beans to a paste.
- Peel and finely chop the onion. Peel and crush the garlic. Grate the cheese. Wash and chop the coriander.
- Melt the butter in a heavy-bottomed saucepan. When it foams add the onion, sprinkle with a little salt and sweat for 6-8 minutes over a very low heat.
- Add the garlic and bay leaves and cook for a couple more minutes. Then add the bean puree and mix thoroughly. Add a little warm water and cook for 10 minutes, stirring constantly. Add more water if the mixture starts to dry - you want a nice, smooth puree that fall easily off the spoon.
- At this stage, you can cool the puree, cover with cling film and re-heat when you are ready to serve.
- To serve, drizzle the puree with sour cream and scatter over the grated cheese and chopped coriander leaves.
