  • This easy-to-bake fruit loaf takes only 25 minutes to prepare for the oven; then just leave it to bake while you get on with other things.

  1. PRE-HEAT OVEN TO 180˚C/160˚C FAN/GAS 4
  2. Leave the butter to soften at room temperature.
  3. Put the sultanas into a small bowl, pour over the rum and leave to soak. Zest the orange.
  4. Sieve the flour into a bowl and mix with the baking powder and a pinch of salt. Add the candied peel.
  5. Cream the butter with the sugar. Add one egg at a time, beating well after each addition.
  6. Drain the sultanas, add to the flour mixture and mix well.
  7. Fold the flour into the creamy batter. Add the orange zest and ground cinnamon and mix thoroughly.
  8. Grease a loaf tin with butter and line with baking parchment. Pour the mixture into the tin and bake for about 50 minutes, or until golden on top.
  9. Leave to cool in the tin for 10 minutes before turning onto a wire rack.
  10. Sprinkle with icing sugar mixed with ground cinnamon before serving.
