A quick, easy and delicious way to prepare asparagus
Vegetarian & vegan dish
2 bunches fresh asparagus
1 tablespoon olive oil
1 teaspoon balsamic vinegar
PRE-HEAT OVEN TO 200˚C/180˚C FAN/GAS 6
SNAP Snap off the woody ends of the asparagus and wash the spears thoroughly.
Lightly oil a baking tray, cover with parchment and lay the asparagus on top in a single layer. Drizzle with olive oil and sea salt. Cover with another sheet of parchment.
Roast in the oven for 10-15 minutes.
Take the asparagus out of the oven and drizzle with the balsamic vinegar before serving.
This quick and easy roasted asparagus is a great veggie dish. Serve it as a starter with shavings of parmesan or as yummy side dish to fish and chicken.
