  1. PRE-HEAT OVEN TO 180˚C/160˚C fan/gas 4
  2. Wash and top and tail the rhubarb. Chop each stalk into 5cm pieces.
  3. Zest and squeeze the orange. Mix the juice and zest with the honey.
  4. Place the rhubarb pieces in an ovenproof dish in one layer. Drizzle with the orange juice and honey mixture and cover with foil.
  5. Bake for 25 minutes. The rhubarb should be soft but still firm.
  6. Serve with vanilla ice cream
