  1. Put the saffron threads in a bowl, add a little boiling water and leave to infuse.
  2. Crush the cardamom pods in a pestle and mortar and collect the tiny black seeds.
  3. Put the rice in a sieve and rinse under running water.
  4. Warm the oil in a saucepan. Add the cardamom seeds and cinnamon stick and cook for 1 minute.
  5. Add the rice, stir well to coat, then cover with 400ml of water.
  6. Cover the pan with a lid and bring to the boil. Turn the heat down and simmer for 10 minutes.
  7. A couple of minutes before the rice is ready, add the saffron threads and infusing liquor to the pan.
  8. Remove the cinnamon stick and serve.
