  • Brussels sprouts are an incredibly versatile vegetable and these days a far cry form the bitter, over-boiled sprouts of the past. In fact you should never boil sprouts. Steam, sauté or shave them raw in salad and enjoy!
  • Leave out the chilli sauce in this recipe and this is a delicious side to serve to children.

INSTRUCTIONS

  1. Wash and tail the sprouts, remove the tough outer leaves and cut the sprouts in half.
  2. Squeeze the lime into a bowl and mix in the honey, chilli sauce and a pinch of salt. Set aside.
  3. Warm the oil in a large frying pan, add the sprouts and stir to coat with the oil. Cook for about 10 minutes, tossing frequently to make sure the sprouts colour evenly. Drizzle over the sweet chilli dressing, toss again to coat and cook for another 2 -3 minutes. Transfer the sprouts to a bowl and serve.
