INSTRUCTIONS

  1. Cut each chicory head in half and rinse thoroughly under running water.
  2. Squeeze the lemon into a small bowl. Mix in the oil and a little sea salt. Drizzle over the chicory.
  3. Heat a griddle pan or large frying pan. Add the chicory halves, cut side down. Press with a spatula and cook over a medium heat for about 7-8 minutes. Turn each piece over and cook for another couple of minutes.
  4. Serve immediately.
