Searing mellows the bitter taste of radicchio. Red chicory is a good substitute if you can’t find radicchio.

INSTRUCTIONS
- Cut the radicchio in half and then into eight wedges. Rinse under running water and set aside.
- Mix the olive oil with the balsamic vinegar, sea salt and black pepper. Massage the mixture into the radicchio wedges.
- Heat a griddle pan and sear the radicchio for 4 minutes, turning so it cooks on all sides.
