This quick and healthy starter is rich in lean protein, minerals and beneficial Omega 3 fats. Scallops have enjoyed an aphrodisiac reputation since ancient Greece. Legend has it that the goddess of love Aphrodite was transported to earth on the shell of a scallop which makes this perfect for a romantic supper!

INSTRUCTIONS
- Gently rinse the scallops under running water and pat dry with kitchen paper.
- Rinse the sage leaves and rub between your fingers. Wash the cress.
- Prepare the balsamic dressing by mixing the olive oil with the balsamic vinegar, a little salt and a grinding of black pepper.
- Warm a frying pan, add the diced pancetta and fry for 5-6 minutes until golden. Add the sage leaves and cook for a couple more minutes. Transfer the pancetta cubes to a warm bowl.
- Add the scallops to the pan, turn the heat up a notch and cook for 2 minutes on each side. The scallops are ready when they turn golden and are springy to the touch.
- Divide the scallops between two plates, spoon the pancetta around them, drizzle with the balsamic dressing and scatter over the cress. Serve immediately.
