Turn a handful of storecupboard staples into a hearty, satisfying, protein-rich breakfast or light supper. If you want to make the dish healthier still, serve with soft boiled eggs dusted with a little sweet paprika.

INSTRUCTIONS
- Drain the borlotti beans in a sieve and rinse under running water. Peel and bash the garlic clove. In a small bowl mix the tomato paste with 100ml of water.
- Heat the oil in a frying pan. Add the garlic clove and chilli flakes. Turn the heat down and gently brown the garlic and chilli, taking good care not to burn them because that would make the dish taste bitter.
- Add the borlotti beans to the frying pan, stir and cook for 1 minute. Add the tomato paste. Sprinkle with the oregano and salt and continue cooking for 5 minutes until the beans are warmed through.
- Heat 1 teaspoon of oil in another frying pan and fry the eggs. Season with salt and black pepper.
- Toast the bread. Spoon the beans over the toast, top with a fried egg and serve immediately.
