Bring out the juicy, mellow flavour of good steak fast with this simple marinade. Beef is a fantastic source of protein, iron and B vitamins. Make sure you buy organic, grass-fed beef.

Any leftovers are delicious the next day in a sandwich with a sliced tomato.

INSTRUCTIONS

  1. Bash the unpeeled garlic. Wash the rosemary and remove the needles from the stalks.
  2. Mix together the garlic, rosemary needles, olive oil and balsamic vinegar, a pinch of sea salt and a good grind of black pepper.
  3. Rinse the steak and pat dry with kitchen paper. Make some slits in the meat with a sharp knife.
  4. Pour the marinade over the steak and leave in the fridge for a minimum of 15 minutes.
  5. TURN THE GRILL ON TO HIGH
  6. Grill the steak for about 4 minutes each side, depending on the thickness of the meat and how well done you like your steak.
