Our Bircher muesli with chia seeds, pistachios, apples & dried apricots is packed with goodness and makes a delicious, nutritious start to the day. Our recipe sticks to the simplicity of the original, with the addition of the chia seeds for an extra healthy boost. If you want to make larger quantities allow one apple and 25g of oats per person.   Add a seasonal twist by substituting the apple with fresh summer berries or autumnal pears.

  1. Finely chop the dried apricots and put them in a bowl. Add the rolled oats, drizzle with a couple of tablespoons of water, cover with cling film and refrigerate overnight.
  2. In the morning, just before serving, roughly chop the pistachios and coarsely grate the apple, peeled or unpeeled to your taste.
  3. Loosen the soaked oats with a little milk and sprinkle with the chia seeds. Add the chopped pistachios, grated apple, the Greek yogurt and top with the fresh berries. Drizzle with the honey and enjoy.
