  1. Peel and finely chop the onion or shallot. Peel and crush the garlic.
  2. Mix the garlic, onion and vinegar in a bowl and leave this to stand for at least 20 minutes.
  3. Wash the tomatoes and cut into quarters. Remove the seeds and dice each quarter.
  4. Wash, deseed and finely chop the chilli.
  5. Add the tomato and chilli to the garlic and onion mixture. Add the oil.
  6. Season with a pinch of salt and a good grind of black pepper.
