  1. Bring a large pan of salted water to the boil. Cook the trofie according to packet instructions
  2. Meanwhile, drain the artichokes and coarsely chop. Peel and finely chop the shallots. Peel and crush the garlic. Wash and roughly chop the parsley. Zest and juice the lemon.
  3. Heat the oil in a large shallow pan. Add the chopped shallots, sprinkle with sea salt and sweat for 5 minutes until soft.
  4. Add the garlic and cook for 1 more minute, stirring constantly to prevent the mixture sticking to the pan.
  5. Add the chopped artichokes, lemon zest and juice and a little water. Turn the heat down and simmer for 10 minutes. Add a little water if the mixture starts to dry up.
  6. Drain the pasta and tip into the pan with the artichokes. Stir well to combine and remove from the heat.
  7. Sprinkle with the grated parmesan and a generous grinding of black pepper. Serve immediately.
