Super-fast weekday pasta supper. Homemade pesto is quick and easy to make and absolutely totally worth it! Even the most expensive shop-bought version cannot compare to the delicious taste of homemade pesto.

  1. Bring a large pan of salted water to the boil.
  2. Wash the basil and tear the leaves. Peel and crush the garlic. Grate the cheeses.
  3. Put the basil and pine nuts in a blender and blitz to a course texture. Add the cheese, garlic and olive oil and blitz to a paste.
  4. Cook the trofie according to packet instruction. Drain and reserve a cupful of the cooking water.
  5. Tip the pasta back in the pan, add the pesto and mix together. Add a generous grinding of black pepper and a little of the reserved hot water if the sauce looks too dry. Serve immediately.
