  • This quick and easy mixed grill combo makes a lovely and healthy weekend breakfast or lunch.
 

INSTRUCTIONS

  1. TURN THE GRILL ON TO HIGH
  2. Wipe the mushrooms and trim the stalks. Wash the tomatoes and rocket.
  3. Mix the olive oil with a little sea salt and a grinding of black pepper.
  4. Arrange the tomatoes and mushrooms on a baking tray. Brush the top of the mushrooms with the seasoned oil and then drizzle the rest over the tomatoes so they are coated in oil. Grill for about 10 minutes or until the tomatoes have almost collapsed.
  5. Meanwhile, toast some bagels. Pile the grilled vegetables on rocket leaves and serve with toasted bagels and cream cheese.
