A simple side dish bursting with valuable vitamins and fibre.  It is lovely with grilled or barbecued meat.

INSTRUCTIONS

  1. Bring a saucepan of salted water to the boil.
  2. Trim the green beans. Place in a colander and rinse under running water.
  3. Wash and halve the tomatoes. Remove the seeds with the help of a spoon, then dice each half.
  4. Add the green beans to the boiling water and cook for about 6-7 minutes. Then drain and rinse again under cold water.
  5. Squeeze the lemon juice into a small bowl. Add the olive oil, a little salt and a generous grinding of black pepper.
  6. Put the beans and diced tomatoes in a salad bowl. Drizzle with the lemon dressing and serve.
