Warm salad of quinoa and summer veggies
A lovely vegetarian one-pot

Rinse the quinoa in a sieve under running water. Cover with water and leave to soak for at least 10 minutes. Then rinse again and cook according to the packet instructions.
Meanwhile, wash the courgettes, top and tail them and then dice. Wash the peppers, deseed and dice.
Peel and finely chop the onion. Wipe and finely slice the mushrooms.
Warm the oil in a frying pan and add the onion. Sprinkle with salt and soften.
After 4-5 minutes add the courgettes and peppers and cook over a medium heat for 5-7 minutes or until they begin to colour and soften.
Then add the mushrooms and cook for a further 5 minutes.
Drain the quinoa and add to the pan with the veggies.
Stir all the ingredients together and cook for another couple of minutes. Season with salt and black pepper and leave to rest for a few minutes before serving.
