Salad of pan-fried mackerel and new potatoes
Simple, nutritious salad with a zingy dressing. A good balance of carbs and protein and on the table in 40 minutes.

Instructions
  1. Scrub the potatoes clean and boil in salted water for 15-20 minutes. Drain and set aside.
  2. Wash the cucumber and radishes and finely slice them. Squeeze the lemon.
  3. Rinse the fish fillets and pat dry with kitchen paper. Brush the fish with some lemon juice and pan fry for 3 minutes on each side or until the fish flakes easily.
  4. Mix the mustard, greek yogurt and remaining lemon juice together.
  5. Halve the potatoes and arrange in a salad bowl. Add the sliced cucumber and radishes. Drizzle with the mustard dressing and combine well.
  6. Flake the fish and toss into the potato salad.
  7. Serve warm with crusty bread
